Pasta Fagioli Recipe

Ingredients
  • 1 c freshly grated parmesan cheese .
  • 6 garlic cloves, minced .
  • 1 c small shell pasta (orzo or small shells) .
  • 1 c small dried white beans .
  • 1 large onion, sliced .
  • extra extra-virgin olive oil (optional) .
  • 1 tbsp extra-virgin olive oil .
  • 1/2 tsp dried rosemary, crushed .
  • 2 tbsps fresh parsley, sliced .
  • salt & black pepper .
  • 10 c water or vegetable stock

Directions
  • Step #1 Wash the beans.
  • Step #2 In a large pot, cover them with cold water.
  • Step #3 Soak for 6-8 hrs.
  • Step #4 Drain into a colander.
  • Step #5 In the same pot, heat 1 tbsp of olive oil over med-heat/flame, add the onion & garlic, & saute until soft.
  • Step #6 Add the beans & water or stock.
  • Step #7 Cover up & bring to a boil over high heat.
  • Step #8 Reduce heat to low, add the rosemary, & let simmer 2 hrs or until the beans are tender.
  • Step #9 Raise heat to high, add the pasta, & cook this until al dente.
  • Step #10 Spice up the soup to taste with salt & pepper, garnish with the sliced parsey.
  • Step #11 Serve accompanied by grated Parmesan cheese & the optional extra-virgin olive oil.
