Wild Rice Salad Recipe

Ingredients
  • 1/4 c orange juice .
  • 1 tsp celery salt .
  • 1 small apple .
  • 8 oz water chestnuts, drained & cut in half .
  • 3/4 c frozen green peas, thawed (or cooked fresh) .
  • lettuce leaves, for serving .
  • 3 c cooked wild rice, cooled .
  • 2 tbsps grated orange zest .
  • 1/4 c olive oil

Directions
  • Step #1 Drain wild rice if necessary as there should not be any water or it will affect the flavor.
  • Step #2 In a large bowl mix rice, chestnuts & zest.
  • Step #3 In a glass jar or shaker container mix oil, juice & celery salt.
  • Step #4 Cover up tightly & shake well to mix.
  • Step #5 Pour over rice mixture & stir carefully to mix.
  • Step #6 Cover up & put in the fridge 1-3 hrs.
  • Step #7 Just before serving core the apple & cut into chunks not quite ½ inch in size.
  • Step #8 Add apple & peas to rice mixture.
  • Step #9 Stir carefully to mix.
  • Step #10 Serve of lettuce leaves, as soon as possible.
