Scottish Honey And Whiskey Cake With Butter Icing Recipe

Ingredients
  • 6 oz butter .
  • 1 c toasted sliced almonds (decoration) .
  • 1/4 c orange zest .
  • 4 tbsps whiskey .
  • 6 oz confectioners' sugar .
  • Butter Icing .
  • 2 tbsps clear honey .
  • 6 oz brown sugar (light) .
  • 3 eggs (beaten) .
  • 2 oz butter .
  • 1 tbsp orange juice .
  • 6 oz self-raising flour

Directions
  • Step #1 Cream the butter & sugar together, add the orange rind & beat in the eggs, one at a time.
  • Step #2 Whisk until the mixture is pale & fluffy.
  • Step #3 Sift in half the self-raising flour & pour in the whiskey.
  • Step #4 Fold in to the mixture & sift in the remaining flour & again fold inches.
  • Step #5 Grease two seven inch sandwich tins & divide the mixture between the two, smoothing the tops.
  • Step #6 Bake for 20-25 mins in an oven at 375F/190C (Gas Mark 5) until the cake is a light golden color.
  • Step #7 Turn onto a wire rack to allow it to cool.
  • Step #8 Butter Icing:.
  • Step #9 Put the butter, honey & orange juice in a mixing bowl.
  • Step #10 Slowly sift in the sugar & work the mixture until well mixd.
  • Step #11 To prepare the cake, use half the butter cream as a sandwich between the two halves of the cake & spread the rest smoothly on the top.
  • Step #12 Add the toasted almonds as decoration.
