Creamy Cauliflower Puree Recipe

Ingredients
  • 2 tsps extra virgin olive oil .
  • 1/2 tsp salt .
  • 1/3 c nonfat plain yogurt .
  • 8 c cauliflower, cut into bite size florets (about 1 head) .
  • 1 dash fresh ground pepper, to taste .
  • 1/8 tsp chives, for garnish .
  • 4 garlic cloves, crushed, peeled & cooked with cauliflower

Directions
  • Step #1 Cook cauliflower & garlic until very tender.
  • Step #2 Place the cooked cauliflower & garlic in a food processor/blender.
  • Step #3 Add yogurt, salt & pepper; pulse several times, 2 tsps oil, then process until smooth & creamy.
  • Step #4 Garnish with chives, if desired drizzle 2 more tsps of olive oil.
  • Step #5 Serve hot.
