Chicken Enchilada Soup Recipe

Ingredients
  • 1 tomato, sliced
  • 1 c shredded Cheddar cheese
  • 1 1/4 c chicken broth
  • 1 c green enchilada sauce
  • 1 (10 oz) can red enchilada sauce
  • 4 cooked, boneless & skinless chicken breast halve
  • 1 jalapeno pepper, seeded & minced
  • 1 tsp ground cumin
  • 1 c half-and-half
  • 10 (6 inch) corn tortillas, cut into 1/2 inch strips

Directions
  • Step #1 Combine chicken stock & tortilla strips in a large pot.
  • Step #2 Cook over med-heat/flame until strips soften & broth thickens somewhat.
  • Step #3 Stir in enchilada sauces & cumin.
  • Step #4 Stir in chicken & half-and-half; heat through.
  • Step #5 Divide among four bowls & garnish with sliced tomato, jalapeno pepper, & cheese.
  • Step #6 Serve with tortilla chips.
