Sweet Potato Salad With Rosemary-honey Vinaigrette Recipe

Ingredients
  • 1/2 tsp fresh ground pepper .
  • 2 tbsps fresh rosemary, sliced .
  • 1/2 tsp salt .
  • 2 tbsps olive oil, divided .
  • 1/4 c honey .
  • 4 1/2 c sweet potatoes, peeled, cubed .
  • 3 tbsps white wine vinegar .
  • 2 garlic cloves, minced

Directions
  • Step #1 Line a 15- x 10-inch jellyroll pan with aluminum foil wrap.
  • Step #2 Coat foil wrap with vegetable cooking spray.
  • Step #3 Toss together sweet potato & 1 tbsp oil in pan.
  • Step #4 Bake at 450° for 35 mins or until tender.
  • Step #5 Whisk together remaining 1 tbsp oil, honey, & next 5 ingredients In a large-ish bowl.
  • Step #6 Add sweet potato; toss well.
  • Step #7 Cool.
