Three Cheese Cavatini Recipe

Ingredients
  • 2 c part-skim ricotta cheese .
  • 1 lb uncooked rigatoni pasta (or similar shape pasta) .
  • 2 c shredded mozzarella cheese .
  • 1 tbsp sliced fresh basil .
  • 28 oz spaghetti sauce (or use your own, you may need more if you like it saucy) .
  • 1 egg .
  • 2 c low fat cottage cheese .
  • 1 tbsp sliced fresh parsley .
  • salt & pepper .
  • 1 tsp oregano .
  • 1/2 tsp nutmeg .
  • 3 garlic cloves, minced .
  • 8 oz mushrooms, sliced .
  • 1/4 c sliced onions .
  • 1 c sliced pepperoni (or sliced pepperoni) .
  • 2 tbsps olive oil

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Cook pasta according to package directions to "al dente".
  • Step #3 While pasta is cooking, remove this from heat to cool, saute mushrooms, onions & garlic in olive oil until tender, do not drain.
  • Step #4 Combine cottage cheese, egg, ricotta, herbs & seasonings.
  • Step #5 Mix cooked pasta with sauce & sauteed onion mixture, & spoon half into bottom of 11" x 13" glass pan.
  • Step #6 Spoon cheese mixture on top of pasta, spreading evenly to the edges.
  • Step #7 Put 1/2 c mozzerella on top of cheese mixture.
  • Step #8 Place sliced pepperoni on top of cheese, then spread remaining pasta/onion/mushroom mixture, then mozzerella cheese.
  • Step #9 Bake for 30-40 mins, until cheese is browning & bubbly.
  • Step #10 Allow to rest at least 5 mins before cutting.
