Thai Fried Bananas Recipe

Ingredients
  • 3/4 c rice flour .
  • 1 tsp salt .
  • 10 bananas .
  • 2 tbsps white sugar .
  • 1/4 c tapioca flour .
  • 1 1/4 c water .
  • 1/2 c shredded coconut .
  • 3 c oil (for frying)

Directions
  • Step #1 In a medium bowl, tapioca, sugar, mix rice flour, salt & coconut.
  • Step #2 Stir in water, a little at a time, & mix to form a thick batter.
  • Step #3 Peel the bananas & cut each lengthwise into 3 or 4 pieces.
  • Step #4 Heat oil in deep-fryer or deep wok to 375 degrees F (190 degrees C).
  • Step #5 Completely coat each banana slice in batter, then fry in hot oil until golden.
  • Step #6 Drain on paper towels.
  • Step #7 Serve at once.
  • Step #8 Serve with Coconut Ice Cream (vanilla ice cream with honey will do if coconut ice cream is not available).
