Spaghetti Con Salsa Di Noci Recipe

Ingredients
  • salt & pepper .
  • 1/4 c parmesan cheese, freshly grated .
  • 3 tbsps parsley, sliced .
  • 2 garlic cloves (optional) .
  • 14 oz whole wheat spaghetti .
  • 1/4 c butter, at about room temp .
  • 1 c walnut pieces or walnut halves .
  • 3 tbsps plain breadcrumbs .
  • 2 tbsps cream

Directions
  • Step #1 Drop the nuts in to a small pan of boiling water, & cook for 1-2 mins.
  • Step #2 Drain.
  • Step #3 Slip off the skins.
  • Step #4 Dry on paper towels.
  • Step #5 Coarsley chop & set aside about a quarter of the nuts.
  • Step #6 Place the remaining nuts, parsley & garlic, the breadcrumbs, if using, oil, in a food processor/blender or mixer.
  • Step #7 Process to a paste.
  • Step #8 Remove to a bowl & stir in the the softened butter & the cream.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Cook the pasta In a large-ish pan of rapidly boiling slated water until al dente.
  • Step #11 Drain, & toss with the sauce.
  • Step #12 Sprinkle top with the reserved sliced nuts, & pass the Parmesan separately.
