Ingredients
1/2 tsp salt .
3 c flour .
FOR THE PASTRY .
1 egg, lightly beaten .
2 tbsps freshly grated parmigiano-reggiano cheese .
fresh ground black pepper .
2 eggs .
FOR THE FILLING .
1/2 c vegetable oil .
2/3 lb feta cheese, crumbled .
1/2 c melted butter .
4 tsps baking powder
Directions
Step #1 For the Pastry.
Step #2 Combine butter, oil, & salt in a bowl.
Step #3 Add 1/2 c hot water & stir.
Step #4 Gradually add 2 c flour.
Step #5 Turn dough onto a floured surface & work in remaining flour.
Step #6 Knead until dough holds together; it will be soft.
Step #7 Form into a ball, wrap in plastic, & put in the fridge for 30 mins.
Step #8 For the Filling.
Step #9 Place feta, eggs, baking powder, parmigiano-reggiano, & pepper in a food processor/blender & pulse until light & creamy.
Step #10 For the Turnovers.
Step #11 Preheat oven to 375°.
Step #12 Divide dough into 20 balls.
Step #13 On a floured surface, roll each ball into a round about 4'' in diameter.
Step #14 Place a heaping tbsps of filling in center of each round.
Step #15 Brush edges with water, fold to enclose filling, then press edges with a fork to seal(Assembled sambusaks may be frozen.
Step #16 ) Place sambusaks on 2 lightly greased cookie sheets, then brush with egg wash.
Step #17 Bake until golden, 30–35 mins.
