Sambusaks (cheese-filled Pastries) Recipe

Ingredients
  • 1/2 tsp salt .
  • 3 c flour .
  • FOR THE PASTRY .
  • 1 egg, lightly beaten .
  • 2 tbsps freshly grated parmigiano-reggiano cheese .
  • fresh ground black pepper .
  • 2 eggs .
  • FOR THE FILLING .
  • 1/2 c vegetable oil .
  • 2/3 lb feta cheese, crumbled .
  • 1/2 c melted butter .
  • 4 tsps baking powder

Directions
  • Step #1 For the Pastry.
  • Step #2 Combine butter, oil, & salt in a bowl.
  • Step #3 Add 1/2 c hot water & stir.
  • Step #4 Gradually add 2 c flour.
  • Step #5 Turn dough onto a floured surface & work in remaining flour.
  • Step #6 Knead until dough holds together; it will be soft.
  • Step #7 Form into a ball, wrap in plastic, & put in the fridge for 30 mins.
  • Step #8 For the Filling.
  • Step #9 Place feta, eggs, baking powder, parmigiano-reggiano, & pepper in a food processor/blender & pulse until light & creamy.
  • Step #10 For the Turnovers.
  • Step #11 Preheat oven to 375°.
  • Step #12 Divide dough into 20 balls.
  • Step #13 On a floured surface, roll each ball into a round about 4'' in diameter.
  • Step #14 Place a heaping tbsps of filling in center of each round.
  • Step #15 Brush edges with water, fold to enclose filling, then press edges with a fork to seal(Assembled sambusaks may be frozen.
  • Step #16 ) Place sambusaks on 2 lightly greased cookie sheets, then brush with egg wash.
  • Step #17 Bake until golden, 30–35 mins.
