Kelly's Chicken Cordon Bleu Recipe

Ingredients
  • 1/4 tsp garlic powder, divided .
  • 3/4 c dry breadcrumbs .
  • 6 slices cooked Canadian bacon (thin slices) .
  • 2 beaten eggs .
  • 6 toothpicks .
  • 3 boneless skinless chicken breasts, lbed thin .
  • Mushroom Gravy .
  • 1/2 tsp seasoning salt, divided .
  • 1 (10 3/4 oz) can cream of mushroom soup .
  • 1/4 c sour cream .
  • 1/4 tsp pepper, divided .
  • 1/4 c ground parmesan cheese .
  • 1/2 c flour .
  • 1/4 c milk .
  • olive oil .
  • 6 slices swiss cheese

Directions
  • Step #1 Pound chicken breasts thin between waxed paper or plastic wrap.
  • Step #2 (*If one end is really thin, you'll want to roll up starting from that end.
  • Step #3 )But you want them about 3/8" thick.
  • Step #4 Top each breast with 2 slices canadian bacon, don't let it overhand chicken, cut in half & overlap if necessary.
  • Step #5 Top each with 2 slices of swiss cheese cut in half.
  • Step #6 *Same instructions as for canadian bacon.
  • Step #7 At thinnest end, roll up tightly, tucking in any meat or cheese.
  • Step #8 *Fold sides in first if you can, I couldn't with mine & they came out just fine.
  • Step #9 Secure with toothpicks.
  • Step #10 In pie dish mix flour & half each of the seasoned salt, pepper & garlic powder.
  • Step #11 In another pie dish or small bowl, beat eggs.
  • Step #12 In third pie dish mix bread crumbs, pepper, second half of each of the seasoned salt, garlic powder & all of the parmesan cheese.
  • Step #13 Coat each lightly in flour mixture, then beaten egg, then bread crumb mixture.
  • Step #14 Pat on bread crumbs.
  • Step #15 Set on plate for about 10 mins to dry a little.
  • Step #16 Meanwhile, heat oil over medium to medium-low heat.
  • Step #17 Brown "good side" first in hot oil for 2 mins.
  • Step #18 Turn over carefully with a spatula & tongs if needed.
  • Step #19 Brown other side (toothpicked side)2 mins.
  • Step #20 Place on greased rack.
  • Step #21 Place rack on cookie sheet.
  • Step #22 Bake in 350º oven for 40 mins.
  • Step #23 Let rest.
  • Step #24 While resting heat gravy over low heat/flame til warmed.
  • Step #25 Serve with gravy if desired.
