Potato-wrapped Salmon Recipe

Ingredients
  • 2 tsps fresh lemon juice .
  • 1 lb atlantic salmon fillets, cut into four pieces .
  • 4 tsps Dijon mustard .
  • 4 large potatoes, peeled & thinly sliced lengthwise .
  • 1/4 tsp salt .
  • 2 tsps unsalted butter, melted

Directions
  • Step #1 Place potatoes in a colander & toss with lemon juice & salt.
  • Step #2 Let stand until potatoes are soft, about 10 mins.
  • Step #3 Pat dry with a paper towel.
  • Step #4 Spray a large baking sheet with nonstick cooking spray.
  • Step #5 Tear off four squares of wax paper (about 12-inches square) & spray with nonstick cooking spray (preferably butter-flavored).
  • Step #6 Shingle all but four potato slices horizontally to form a 5x9-inch rectangle on each square.
  • Step #7 Spray potatoes with cooking spray.
  • Step #8 Place salmon lengthwise over potatoes & spread with mustard.
  • Step #9 Lift right side of wax paper & fold over salmon, covering it with potatoes.
  • Step #10 Lightly press paper to help potatoes adhere to fish & peel back wax paper.
  • Step #11 Repeat with left side of wax paper.
  • Step #12 Lay remaining potato slices over seam where shingled potatoes meet & brush with butter.
  • Step #13 With a spatula, carefully transfer salmon to baking sheet, turning bundles over so the side with the extra potato slice is down.
  • Step #14 Cover up loosely with plastic wrap & put in the fridge so potatoes set, about 30 mins.
  • Step #15 Preheat broiler.
  • Step #16 Spray potatoes with cooking spray.
  • Step #17 Broil 6 inches from heat until potatoes are golden & crisp, about 5 mins on each side.
