Aunt Rachel's Crumb Cake Recipe

Ingredients
  • 1 tbsp vanilla .
  • 2 tbsps sugar (plus 1/4 of dough) .
  • 1 tbsp grated lemon peel .
  • 2 1/4 c unbleached white flour .
  • 1/2-3/4 c strawberry jam .
  • Dough .
  • Crust .
  • 2 egg yolks .
  • Filling .
  • 1 c margarine or butter .
  • 1/2 c sugar .
  • 1/4 c unbleached white flour

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Cream softened margarine/butter with sugar until light & fluffy.
  • Step #3 Mix in egg yolks one at a time & then the peel & vanilla.
  • Step #4 Add flour & mix until mixed & you are able to make a ball with the dough.
  • Step #5 Take 1/4 of the dough & place it in a separate bowl.
  • Step #6 Take the remaining dough & flatten it evenly in an 8 x 8 square pan.
  • Step #7 Spread jam evenly over flattened dough.
  • Step #8 Add the flour & sugar to the 1/4 dough & mix, then crumble it.
  • Step #9 Spread the crumbs evenly on top of jam.
  • Step #10 Bake for 50 mins or until crumbs are lightly browned.
