Lotus Flowers Recipe

Ingredients
  • 1 tsp cornstarch .
  • 1 egg white .
  • salt & freshly ground black pepper .
  • 1/2 tsp fresh ginger, finely grated .
  • 2 scallions .
  • 1 lb raw shrimp .
  • 6 oz water chestnuts .
  • 1 tsp rice wine (or dry sherry) .
  • oil (for deep frying)

Directions
  • Step #1 Peel, devein & finely chop the shrimp.
  • Step #2 Finely chop water chestnuts & scallions.
  • Step #3 Mix together the shrimp, rice wine, water chestnuts, scallions, ginger & salt & pepper.
  • Step #4 Beat the egg white until stiff.
  • Step #5 Fold the egg white & the cornstarch into the shrimp mixture.
  • Step #6 Roll into balls the size of walnuts (wet hands will make this easier).
  • Step #7 Heat the oil in a wok (if you are using a fryer, heat to 350°F) & fry the balls a few at a time until golden brown, about 2 to 3 mins.
  • Step #8 Drain on a paper towel covered rack & serve as soon as possible.
