Tips To Keep Cut Flowers Fresh
Ingredients
1 tsp cornstarch .
1 egg white .
salt & freshly ground black pepper .
1/2 tsp fresh ginger, finely grated .
2 scallions .
1 lb raw shrimp .
6 oz water chestnuts .
1 tsp rice wine (or dry sherry) .
oil (for deep frying)
Directions
Step #1 Peel, devein & finely chop the shrimp.
Step #2 Finely chop water chestnuts & scallions.
Step #3 Mix together the shrimp, rice wine, water chestnuts, scallions, ginger & salt & pepper.
Step #4 Beat the egg white until stiff.
Step #5 Fold the egg white & the cornstarch into the shrimp mixture.
Step #6 Roll into balls the size of walnuts (wet hands will make this easier).
Step #7 Heat the oil in a wok (if you are using a fryer, heat to 350°F) & fry the balls a few at a time until golden brown, about 2 to 3 mins.
Step #8 Drain on a paper towel covered rack & serve as soon as possible.
