1/2 tsp red pepper flakes (more or less to your liking) .
1/2 c fresh basil .
1 c onions, coarsely sliced .
15 oz fresh bratwursts .
1 tbsp olive oil
Directions
Step #1 Preheat oven to 425°F.
Step #2 Mix red pepper, onion & garlic with 1 tbsps olive oil in 9x13" baking dish & roast in oven for 25 mins; stirring every once in awhile.
Step #3 While vegetables roast, remove casing from bratwurst, crumble & brown in a skillet over med-heat/flame until they are no longer pink & well brown.
Step #4 Remove bratwurst & drain on paper towel.
Step #5 Pour fat from skillet.
Step #6 Add bratwurst & beer to skillet & let simmer.
Step #7 Cook pasta according to package directions & drain, reserving 1/2 c of pasta water.
Step #8 Remove roasted vegetables from oven, red pepper flakes, pasta, as soon as possible add bratwurst from skillet; add basil, 1 c of cheese & toss to mix thoroughly.
Step #9 If mixture seems too dry, add some of the pasta water to moisten.
Step #10 Sprinkle top remaining cheese over top & serve.
