500 g mixed dried fruit, sliced (figs, sultanas, apricots etc. sliced, I tend to use the three listed above with some red berries) .
50 g ground almonds .
85 g plain flour .
80 ml orange juice .
85 g whole wheat flour .
1 tsp ground mixed spice .
300F ml water .
3 tsps baking powder
Directions
Step #1 Pre-heat oven to 170oC/Gas Mark 3 & line 2 loaf tins with baking parchment (this will make two flattish cakes, for a full-sized cake use just one tin).
Step #2 Put the dates & water in a pan & bring to the boil.
Step #3 Remove the pan from the heat & set aside.
Step #4 Sieve the plain flour, baking powder & mixed spice into a bowl.
Step #5 Add the wholemeal flour, mixed fruit & ground almonds.
Step #6 Stir to mix.
Step #7 Stir in the wet date mixture & the orange juice.
Step #8 Mix well.
Step #9 Spoon into the tin(s).
Step #10 Bake for 50 mins (170C / gas mark 3) or until a skewer comes out clean.
