Molly Cake Recipe

Ingredients
  • 250 g stoned dates, roughly sliced .
  • 500 g mixed dried fruit, sliced (figs, sultanas, apricots etc. sliced, I tend to use the three listed above with some red berries) .
  • 50 g ground almonds .
  • 85 g plain flour .
  • 80 ml orange juice .
  • 85 g whole wheat flour .
  • 1 tsp ground mixed spice .
  • 300F ml water .
  • 3 tsps baking powder

Directions
  • Step #1 Pre-heat oven to 170oC/Gas Mark 3 & line 2 loaf tins with baking parchment (this will make two flattish cakes, for a full-sized cake use just one tin).
  • Step #2 Put the dates & water in a pan & bring to the boil.
  • Step #3 Remove the pan from the heat & set aside.
  • Step #4 Sieve the plain flour, baking powder & mixed spice into a bowl.
  • Step #5 Add the wholemeal flour, mixed fruit & ground almonds.
  • Step #6 Stir to mix.
  • Step #7 Stir in the wet date mixture & the orange juice.
  • Step #8 Mix well.
  • Step #9 Spoon into the tin(s).
  • Step #10 Bake for 50 mins (170C / gas mark 3) or until a skewer comes out clean.
  • Step #11 Turn out onto a wire rack & cool.
  • Step #12 Serve in slices with a nice c of tea.
