Ingredients
1/4 c warm water (100-110 deg.F.) .
1/8 tsp baking soda .
1 c warm milk (100-110 deg. F.) .
1/4 oz Fleischmann's active dry yeast (1 envelope or 2 tsp.) .
2 tsps sugar .
3 c all-purpose flour .
1 tsp salt .
cornmeal
Directions
Step #1 Place warm water in large warm bowl.
Step #2 Sprinkle top in yeast; stir until dissolved.
Step #3 Stir in warm milk, sugar, salt, & baking soda.
Step #4 Gradually sitr in enough flour to make soft dough.
Step #5 Grease well a 8 1/2 x 4 1/2 inches microwave-safe loaf pan; sprinkle with cornmeal.
Step #6 Place batter in pan; sprinkle with extra cornmeal.
Step #7 To let rise, microwave uncovered, on MEDIUM (50% power) for 1 min.
Step #8 Let rest 10 mins.
Step #9 Repeat microwaving & resting 1 or 2 times, until doubled in size.
Step #10 (Or just cover & let rise in a warm place until doubled - obviously this will take a bit longer).
Step #11 To bake, microwave on HIGH (100% power) for 4 to 6 mins or until top is no longer moist.
Step #12 Let stand 5 mins in pan.
Step #13 Remove from pan; let cool on wire rack.
Step #14 Slice & toast to serve.
Step #15 Caution: Recipe developed for 650 watt microwave oven.
Step #16 If yours is stronger, shorten the time.
Step #17 You can always add time, you cannot subtract it.
Step #18 Whole Wheat: Substitute 1 c whole wheat flour for all-purpose flour.
Step #19 Proceed as above.
Step #20 Cinnamon-Date: Add 1 tsps ground cinnamon along with baking soda; mix well.
Step #21 Stir in 1/2 c sliced or snipped pitted dates, along with flour.
Step #22 Proceed as above.
Step #23 Orange-Nut: Add 1 tbl.
Step #24 grated orange peel along with baking soda; mix well.
Step #25 Stir in 1/2 c sliced toasted blanched almonds along with flour.
Step #26 Proceed as above.
Step #27 (I actually like pecans better).
