London Broil With Roasted Red Peppers, Cremini, Feta And Onion S Recipe

Ingredients
  • 1 tsp pepper .
  • 2-3 bay leaves .
  • 2 tsps sliced garlic .
  • 1 orange rind or tangerine peel, crushed .
  • Marinade .
  • 1/2 tbsp butter .
  • 1/2 c water .
  • 1/2 c olive oil .
  • Meat .
  • 1 tsp salt .
  • 1/2 tsp fine salt .
  • Topping .
  • 1/2 c red wine (Shiraz) .
  • 1 tbsp feta cheese .
  • 4 oz cremini mushrooms, quartered .
  • 1/2 white onion, sliced .
  • 2-3 lbs london broil beef .
  • 1 tsp garlic powder .
  • 1/2 tsp whole peppercorns .
  • 8 oz jarred roasted red peppers, sliced

Directions
  • Step #1 In a small bowl mix: red wine (Shiraz), olive oil, Salt, sliced garlic, Whole pepper corns, Orange rind, water, & Bay leaves.
  • Step #2 Spice up meat with 1 tsp salt, 1tsp pepper & 1 tsp garlic powder.
  • Step #3 Place in shallow pan, cover with marinade & marinate for 1-3 hrs.
  • Step #4 For medium rare, grill on a medium heat grill for 5 mins on each side.
  • Step #5 For medium doneness, grill over med-heat/flame for 7 mins on each side.
  • Step #6 While meat is grilling, heat a small sauté pan to medium heat, & melt butter.
  • Step #7 Sauté mushrooms & onions 2-3 mins.
  • Step #8 Add Roasted Peppers & continue to sauté for another min or so, then cover & remove this from heat.
  • Step #9 When meat comes off of the grill, allow it to rest for 5-10 mins before slicing.
  • Step #10 When ready to serve, add feta cheese to the sauté topping mixture, toss & serve over meat slices.
