Cheddar And Bacon Buttermilk Scones Recipe

Ingredients
  • 1 large egg, beaten .
  • 1/4 tsp mustard powder .
  • 4 oz sharp cheddar cheese, grated .
  • 1/4 tsp baking powder .
  • 1 1/2 tsps fresh chives, sliced .
  • 1 oz butter .
  • 1/4 tsp cayenne pepper .
  • 6 oz self-raising flour .
  • 3 tbsps buttermilk .
  • 2 tbsps milk .
  • 4 oz smoked bacon

Directions
  • Step #1 Preheat oven to 220°C.
  • Step #2 Grill the bacon until starting to crisp.
  • Step #3 Cool & chop into small dice.
  • Step #4 Sift the flour into a mixing bowl along with the mustard powder, baking powder & cayenne.
  • Step #5 Using your hands rub the butter into the mixture until it's fully mixed & it looks like fine breadcrumbs.
  • Step #6 Stir in the bacon, 3 /4 of the cheddar & chives.
  • Step #7 Mix the beaten egg with the buttermilk.
  • Step #8 Stir into the flour mixture until it's formed a smooth dough, but go lightly, otherwise the scones will be very heavy.
  • Step #9 Roll out the dough on a lightly floured surface to 1 inch thickness.
  • Step #10 Cut into 6 circles with a 2 1/2 inch cutter.
  • Step #11 Place scones on a greased baking sheet.
  • Step #12 Brush with milk & sprinkle it over remaining cheddar.
  • Step #13 Bake for 15 - 20 mins.
