White Chocolate Muffins Recipe

Ingredients
  • 3/4 c milk (do not use nonfat) .
  • 2 c all-purpose flour .
  • 1 tbsp baking powder .
  • 3/4 c sugar .
  • 1 large egg, at about room temp .
  • 1 tsp vanilla extract .
  • 4 tbsps unsalted butter, at about room temp .
  • 12 oz white chocolate, finely sliced (may use 12 oz. white chocolate chips) .
  • 1/2 tsp salt

Directions
  • Step #1 In a mixing bowl, baking powder, whisk flour, & salt until uniform; set aside.
  • Step #2 Add 4 oz white chocolate & all the butter in the top of a double boiler set over simmering water.
  • Step #3 Stir constantly until half the choclate & butter is melted.
  • Step #4 Remove the top of the double boiler; continue stirring, away from the heat, until the mixture is smooth; cool for 10 mins.
  • Step #5 In a large mixing bowl, whisk the egg & sugar until thick & pale yellow (approx 2 mins).
  • Step #6 Whisk in the cooled chocolate mixture until smooth; whisk in the milk & vanilla.
  • Step #7 Use a wooden spoon & stir in the the remaining sliced white chocolate.
  • Step #8 Stir in flour mixture just until moistened.
  • Step #9 Fill muffin tins that have been sprayed with nonstick cooking spray, 3/4 full.
  • Step #10 Bake in a 375 degree oven for 20 mins OR until muffins are browned with sightly rounded tops & pick comes out clean.
  • Step #11 Set pan on a wire rack to cool for 10 mins.
  • Step #12 Turn muffins out of pan; cool on wire rack for 5 mins.
  • Step #13 If storing or freezing muffins, cool completely before sealing in airtight container or in freezer-safe plastic bags.
  • Step #14 Alternative--White Chocolate Orange Muffins: add 2 tsps orange extract or 1/2 tsp orange oil with the vanilla.
