Nova Scotia Crab Quiche Recipe

Ingredients
  • 1/2 tsp salt .
  • 1/4 c swiss cheese or cheddar cheese, grated .
  • 1 c cream .
  • 1/8 tsp nutmeg .
  • 1 pie crust, thinly rolled .
  • 3 eggs .
  • 1 c crab (canned or cooked fresh) .
  • 2 tbsps brandy or lemon juice .
  • 1 c mushrooms, sliced .
  • 1 tbsp flour

Directions
  • Step #1 Line 8 2" aluminum tart pans with thinly rolled pastry.
  • Step #2 Preheat oven to 375F.
  • Step #3 Combine & stir mushrooms with brandy or lemon juice.
  • Step #4 Shred crab, removing any hard parts.
  • Step #5 Fill each tart with alternate layers of mushrooms, crab & grated cheese.
  • Step #6 Beat eggs, flour, nutmeg, salt & cream.
  • Step #7 Pour equally over each tart.
  • Step #8 Place in baking pan & bake 20-30 mins or until custard is set, & top is golden brown.
  • Step #9 If you are preparing this in advance, cool thoroughly & wrap each tart in square foil wrap.
  • Step #10 Refrigerate or freeze.
  • Step #11 To reheat, unwrap & place this in a 375F oven 10-15 mins.
