Ham, Leek, Egg & Cheese Pies Recipe

Ingredients
  • 6 eggs .
  • fresh ground pepper, to taste .
  • 1 tbsp fresh parsley, sliced .
  • 2 c cream (preferably a thick cream, reduced or low fat is fine) .
  • 1 c tasty cheese, grated .
  • 6 slices ham .
  • 3 garlic cloves, sliced .
  • 1 tbsp oil .
  • salt, to taste (optional) .
  • 1/8 tsp nutmeg .
  • 1-2 leek, thoroughly washed & sliced .
  • 1 c parmesan cheese, freshly grated

Directions
  • Step #1 Preheat oven to 170°-180°C.
  • Step #2 Heat the oil in a pan & carefully sauté the leeks & garlic until tender.
  • Step #3 Spice up to taste (if adding salt, remember that the ham will add some saltiness).
  • Step #4 Cut the ham into rounds & place this in deep muffin trays.
  • Step #5 Top with the leek & garlic mixture, carefully pressing down, & carefully break an egg into each muffin recess.
  • Step #6 Top each pie with a small dollop of cream & the cheeses.
  • Step #7 Then cook the pies in the oven for about 12 mins or until the eggs are just set.
  • Step #8 Leave the pies in the muffin tray for about 5 mins before unmoulding & serving hot or cold.
