Kiwi Strawberry And Blueberry Pavlova Recipe

Ingredients
  • FILLING .
  • 1 tsp white wine vinegar (I've used regular vinegar & it works fine) .
  • 1/2 c blueberries (also frozen) .
  • TOPPING .
  • 3-4 kiwi fruits .
  • 2 tbsps sugar .
  • MERINGUE .
  • 2 c whipping cream .
  • 1-2 c strawberries (I use the frozen ones, much easier) .
  • 4 egg whites .
  • 1 c sugar .
  • 1 tsp cornstarch .
  • 1 pinch salt

Directions
  • Step #1 Best to make the meringue the night before.
  • Step #2 Preheat oven to 275F (135C).
  • Step #3 Line a baking sheet with parchment paper.
  • Step #4 Draw a 9 inch circle on paper.
  • Step #5 To make meringue, beat egg whites with salt until stiff peaks form.
  • Step #6 Gradually beat in superfine sugar, then continue to beat 5 mins.
  • Step #7 Fold in cornstarch & vinegar.
  • Step #8 Using a metal spatula, spread meringue mixture evenly over circle on prepared baking sheet.
  • Step #9 Bake in oven 10 mins.
  • Step #10 Lower heat to 225F (105C) & cook 45 mins more.
  • Step #11 Turn off heat & leave meringue in oven to cool slowly 1 hr at least.
  • Step #12 I usually leave it in all night.
  • Step #13 Remove from oven & carefully transfer to a plate.
  • Step #14 Make sure your fruit is thawed at this point.
  • Step #15 To make filling, whip cream with sugar until thick.
  • Step #16 You can cut up 1 kiwi into the whipped cream if you like.
  • Step #17 I normally do, but make sure your kiwis are sweet before you do, otherwise you can ruin the whipped cream.
  • Step #18 Carefully spoon cream mixture over meringue, smoothing with a metal spatula.
  • Step #19 Decorate top this with fruit.
  • Step #20 I slice the kiwis & line them all around the edge.
  • Step #21 Then I put the strawberries inside the kiwi line & in the very center I put the blueberries.
  • Step #22 Serve as soon as possible cut in wedges.
