Aluwa Recipe

Ingredients
  • 1/2 c sugar .
  • 2 tbsps rose water .
  • 1 1/2 c milk .
  • 14 1/2 oz sweetened condensed milk .
  • 1 c cooked mashed potatoes .
  • 1 c cashew nuts, finely sliced (optional) .
  • 4 oz butter or ghee .
  • 1 tsp ground cardamom (optional)

Directions
  • Step #1 Put sugar, milk, condensed milk & ghee into a large heated saucepan (a non stick pan is excellent for this).
  • Step #2 Cook over med-heat/flame, stirring constantly, until mixture reaches soft ball stage or 116°C (240°F) on a candy thermometer.
  • Step #3 (To test for softball stage, drop a little into a c of ice.
  • Step #4 cold water.
  • Step #5 If it firms enough to be moulded into a soft ball, it has reached the required temperature.
  • Step #6 ).
  • Step #7 Remove from heat, add smoothly mashed potato & beat with a rotary beater until all lumps are beaten out.
  • Step #8 If using a pan with non stick lining, pour mixture into a bowl before doing this or the metal beaters will scratch the non stick surface.
  • Step #9 Return to heat & cook to soft ball stage or 116°C (240°F) once more.
  • Step #10 Remove from heat, stir in the nuts, rose water & cardamom & mix well.
  • Step #11 Pour into a well buttered shallow dish or baking tin.
  • Step #12 Pres lightly with a piece of buttered banana leaf or aluminium foil wrap to smooth & flatten the surface.
  • Step #13 Allow to cool & set, then cut into diamond shapes.
