Roasted Pepper Vegetarian Chili Recipe

Ingredients
  • 15 oz black beans .
  • 2 green bell peppers .
  • 1 tsp dried oregano .
  • 2 garlic cloves, minced .
  • 4 oz green chilies, sliced .
  • 15 oz crushed tomatoes .
  • 1 large onion, sliced .
  • 2 red bell peppers .
  • 1/2 tsp cumin .
  • 1 zucchini, quartered then sliced 1/4-inch thick .
  • 2 tbsps chili powder .
  • 15 oz pinto beans .
  • 15 oz garbanzo beans (aka chickpeas) .
  • 15 oz sliced tomatoes

Directions
  • Step #1 Cut peppers in half & remove the seeds.
  • Step #2 Place on a baking sheet & press to lay flat, skin side up.
  • Step #3 Broil until blackened (about 15 mins).
  • Step #4 Seal in a plastic bag for 15 mins.
  • Step #5 Remove from the bag & remove the skin.
  • Step #6 Make slices about 1/2" x 2".
  • Step #7 Place all ingredients into a 3 quart slow-cooker.
  • Step #8 Cook on low for 8 hrs, or high for 4 (if you're in a hurry).
