French Scrambled Eggs With Truffle Oil Recipe

Ingredients
  • sea salt .
  • 1/4 c mineral water, plus .
  • 6 tbsps unsalted butter, cold (cut into small pieces}) .
  • 12 large eggs .
  • 6 brioche bread, warmed or 12 slices brioche bread, toasted .
  • 2 tbsps mineral water .
  • 2 tsps white truffle oil .
  • 1 tbsp chives, finely sliced .
  • fresh ground pepper

Directions
  • Step #1 In a bowl, whisk the eggs & water;.
  • Step #2 Melt 2 tbsps of the butter In a large-ish stainless steel bowl set over a pot of simmering water; Add the eggs & cook over low heat/flame, carefully stirring with a heatproof rubber spatula & scraping the bottom of the bowl until the eggs just begin to set, about 5 mins;.
  • Step #3 Add the remaining butter to the eggs, & cook, stirring & scraping the bottom & sides of the bowl, 1 piece at a time, until the eggs are thick & cooked through but still soft, about 5 mins longer.
  • Step #4 Spice up with salt & pepper; transfer to plates.
  • Step #5 Drizzle with the truffle oil, sprinkle with the chives & serve at once with the brioche.
