Diabetic Banana Cream Pie Recipe

Ingredients

2 1/2 tbsps cornstarch .
1 baked pie crust .
1 tbsp butter or margarine .
2 c milk .
5 tsps artificial sweetener .
1/4 tsp salt .
1 tsp vanilla .
3 egg yolks, beaten .
2 ripe bananas, peeled & slice thin

Directions

Step #1 Combine yolks, salt & cornstarch.
Step #2 In a double boiler, scald milk.
Step #3 Pour milk slowly over egg mixture, stirring constantly.
Step #4 Return custard to double boiler, stirring until it thickens.
Step #5 Remove from heat.
Step #6 Stir in shortening, vanilla & artificial sweetener.
Step #7 Place sliced bananas in bottom of baked pie crust.
Step #8 Pour custard on top.
Step #9 Chill before serving.
