Garbanzo Cassoulet Recipe

Ingredients
  • Topping .
  • 1 c sliced onions .
  • 2 c tomato sauce, mediterranean (purchased or homemade) .
  • 1 tsp dried basil .
  • 1 tsp sugar (to taste) .
  • 1 small onion, peeled but left whole .
  • Sauce .
  • 1 tbsp finely minced garlic (or to taste) .
  • salt & freshly ground black pepper, to taste .
  • 1 c cubed carrots .
  • 1/2 c fresh parsley, chopoed .
  • 1 tbsp lemon juice .
  • 2 c dry breadcrumbs .
  • 4 whole cloves .
  • 1 tsp dried thyme .
  • 2 (15 oz) cans chickpeas, drained, liquid reserved, & rinsed .
  • 2 tbsps olive oil .
  • 2 sprigs fresh parsley .
  • Beans .
  • 2 garlic cloves, minced .
  • 2 tbsps olive oil .
  • 6 plum tomatoes, sliced or 3 medium tomatoes, sliced

Directions
  • Step #1 BEANS.
  • Step #2 Put chick peas in large pot & add water to cover.
  • Step #3 Stick cloves in whole onion & add to pot along with carrots, garlic & parsley sprigs.
  • Step #4 Bring to boil, reduce heat, cover & let simmer for 45 mins or until carrots are tender.
  • Step #5 Drain & discard the onion with cloves & parsley springs.
  • Step #6 Set aside.
  • Step #7 SAUCE.
  • Step #8 In large skillet, heat the olive oil over medium-high heat.
  • Step #9 Add onion & garlic & cook, until onion becomes translucent, stirring, about 5 mins.
  • Step #10 Stir in the fresh tomatoes.
  • Step #11 Add tomato sauce, lemon juice, 1 1/2 c of reserved bean liquid, sugar, basil & thyme.
  • Step #12 Bring sauce to a boil, reduce heat & let simmer, covered, for about 45 mins.
  • Step #13 Add salt & pepper.
  • Step #14 Remove the pan from heat & set aside.
  • Step #15 TOPPING.
  • Step #16 In medium skillet, heat olive oil over high heat.
  • Step #17 Add 1 c of the bread crumbs & fresh parsley & cook, until golden, stirring, about 1 min.
  • Step #18 Remove pan from heat, transfer to a bowl & mix in remaining 1 c of bread crumbs.
  • Step #19 Set aside.
  • Step #20 AT LAST.
  • Step #21 Preheat oven to 350 Fahrenheit.
  • Step #22 Combine beans & sauce in deep oven-proof casserole or baking dish.
  • Step #23 Sprinkle top 1/3 of bread crumb mixture on top & bake for 15 mins.
  • Step #24 Push bread crumb layer down into beans with back of spoon & sprinkle with 1/3 of bread crumb mixture & bake for 15 mins.
  • Step #25 Repeat with last 1/3 of bread crumb mixture, & bake for 10 mins.
  • Step #26 Finally, place cassoulet under broiler for 5 mins or until lightly browned on top.
  • Step #27 Serve as soon as possible.
