Fruity Frozen Delight Recipe

Ingredients
  • 2 tbsps lime juice .
  • 1/2 c orange juice, freshly squeezed .
  • FRUIT LAYER TWO .
  • 1 pinch salt .
  • 1 c cantaloupes, finely sliced .
  • 1/2 c sugar .
  • 1 c strawberries, sliced .
  • 1 oz ghirardelli bittersweet chocolate, shaved .
  • 1/2 c sugar .
  • 1 tbsp lime juice .
  • FRUIT LAYER THREE .
  • 3 c heavy cream .
  • FRUIT LAYER ONE .
  • 1 tbsp mint, finely sliced .
  • 2 tbsps lime juice .
  • 1 oz ghirardelli bittersweet chocolate, shaved .
  • 1/2 c sugar .
  • FROZEN YOGHURT .
  • 2 tbsps orange zest .
  • 3 egg whites .
  • 1/2 c sugar .
  • 1 pinch salt .
  • 3 c Greek yogurt .
  • 1 pinch salt .
  • 1/2 tsp cinnamon .
  • 1 c dates, sliced .
  • 1 oz ghirardelli bittersweet chocolate, shaved

Directions
  • Step #1 FROZEN YOGHURT:.
  • Step #2 Whip cream until stiff.
  • Step #3 Whisk egg whites until stiff peak stage; add sugar little by little until stiff & glossy.
  • Step #4 Lightly fold all ingredients together until well mixed.
  • Step #5 Divide into three equal portions & spoon into freezer containers.
  • Step #6 Freeze for 2 ½ hrs stirring every ½ hr or so to ensure a smooth end product.
  • Step #7 Mix each fruit “jam” into its own frozen yoghurt portion along with the chocolate shavings.
  • Step #8 Return to freezer for 2 hrs to freeze solid.
  • Step #9 STRAWBERRY AND CANTALOUPE LAYER: Each fruit "jam" is made separately.
  • Step #10 Do not add chocolate at this stage.
  • Step #11 Heat all ingredients & stir over low heat/flame for five mins or until sugar has dissolved.
  • Step #12 Leave to cool.
  • Step #13 DATE LAYER:.
  • Step #14 Heat all ingredients except dates for five mins or until sugar has dissolved.
  • Step #15 Stir in dates & leave to cool.
  • Step #16 ASSEMBLY:.
  • Step #17 Spoon 2 c of cantaloupe yoghurt into each loaf pan & smooth down.
  • Step #18 Spoon 2 c of the strawberry yoghurt on top in the same fashion & lastly add 2 c of the date yoghurt.
  • Step #19 Place back into freezer until ready to serve.
  • Step #20 PRESENTATION:.
  • Step #21 Remove frozen yoghurt from loaf pan by placing pan under running faucet for 15 seconds taking care to not get frozen yoghurt wet.
  • Step #22 Invert pan & lay frozen yoghurt loaf onto well-chilled serving platter & decorate as desired.
  • Step #23 Serve in slices.
