Coconut Ginger Macadamia Ice Cream Recipe

Ingredients
  • 2 c heavy cream .
  • 14 oz coconut milk .
  • 1 c whole milk .
  • 1/2 c sugar .
  • 6 large egg yolks .
  • 3 tbsps fresh ginger, grated .
  • 15 oz coconut cream .
  • 2/3 c macadamia nuts, pieces .
  • 1 pinch salt .
  • 2/3 c candied ginger, cut in small cubes

Directions
  • Step #1 Heat milk, cream, & fresh ginger in pan over med-heat/flame.
  • Step #2 As it begins to boil, take off heat, & strain ginger out.
  • Step #3 Return mixture to pan.
  • Step #4 In a bowl, beat the egg yolk with the sugar & then beat in the coconut milk, salt,and coconut cream.
  • Step #5 Slowly add this mixture to the hot mixture while stirring.
  • Step #6 Put on burner on low & cook this until the mixture coats the back of a spoon.
  • Step #7 Chill in the fridge or freezer until very cold.
  • Step #8 Put in ice-cream maker & follow directions.
  • Step #9 Add the nuts & candied ginger just before putting the finished mixture into the freezer for final chilling.
