Ingredients
  •  
  • 1 tbsp butter
  • 3 1/2 tbsps cornstarch
  • 1 pinch salt
  • 1 c shortening
  • 2 lbs sour cherries, pitted
  • 2 c all-purpose flour
  • 1/2 c cold water
  • 1 1/8 c white sugar
  • 1/4 tsp almond extract

Directions
  • Step #1 In a large bowl, mix flour & salt.
  • Step #2 Cut in the shortening until pea sized.
  • Step #3 Stir in water until mixture forms a ball.
  • Step #4 Divide dough in half & shape into balls.
  • Step #5 Wrap in plastic & put in the fridge for 4 hrs or overnight.
  • Step #6 Roll one ball out to fit a 9 inch pie plate.
  • Step #7 Place bottom crust in pie plate.
  • Step #8 Roll out top crust & set aside.
  • Step #9 Preheat oven to 375 degrees F (190 degrees C.
  • Step #10 ) In a saucepan, mix cherries, sugar & cornstarch.
  • Step #11 Let sit for about 10 mins.
  • Step #12 Bring to a boil over med-heat/flame, stirring constantly.
  • Step #13 Lower the heat & let simmer for 5 mins or until the juices thicken & become translucent.
  • Step #14 Remove from heat & stir in the the butter & almond extract.
  • Step #15 Mix thoroughly & pour this into pie shell.
  • Step #16 Cover with top crust, seal edges, & cut away excess dough.
  • Step #17 Make several small slits in the top to allow steam to escape.
  • Step #18 Bake in the preheated oven for 45 to 55 mins, or until crust is golden brown.
