Sipulipiirakka (finnish Onion Pie) Recipe

Ingredients
  • 1 c sour cream .
  • 1 1/4 tsps active dry yeast (equilavents listed at bottom of recipe) .
  • 1 1/2 c all-purpose flour .
  • 1 pinch salt .
  • 1/2 tsp salt .
  • 4 eggs .
  • 3/4 c water (105 to 116 degrees F) .
  • 1/4 lb sliced smoked ham (1/2-inch dice) .
  • 2 tbsps oil or melted butter .
  • 1 tbsp caraway seeds .
  • 1 1/2 lbs sweet onions

Directions
  • Step #1 In large bowl, dissolve yeast in warm water.
  • Step #2 Let stand 5 mins.
  • Step #3 Add salt,oil, or butter, & flour.
  • Step #4 Beat until dough is smooth & satiny.
  • Step #5 Cover up, let rise for 1 hr (until doubled).
  • Step #6 Cut onions into thin slices.
  • Step #7 Place in frying pan along with ham & cook over low heat/flame until onions are soft (about 15 mins).
  • Step #8 Remove from heat, salt to taste, stir in the sour cream, eggs, & caraway seeds.
  • Step #9 Butter 10 inch pie, quiche or tart pan.
  • Step #10 Preheat oven to 400F degrees F.
  • Step #11 On lightly floured board, roll out pastry to fit prepared pan.
  • Step #12 Turn filling into lined pan.
  • Step #13 Bake for 35 to 40 mins until crust is browned & pie is set.
  • Step #14 Note: Yeast equilavents are One package = 2 1/4 tsps = 1/4 oz.
