Houseboat Potato Salad Recipe

Ingredients
  • 2 c mayonnaise .
  • 1 tsp salt .
  • 1 c sliced onions .
  • 1/3 c Italian salad dressing .
  • 1 c thinly sliced celery .
  • 2 tbsps yellow mustard .
  • 1 tsp celery seeds .
  • 3 lbs red potatoes .
  • 1 dozen hard-boiled eggs .
  • 1 c sliced sweet gherkins or dill pickles .
  • 1/4 tsp pepper .
  • 1/2 c thinly sliced radishes .
  • 1/2 tsp salt .
  • 1 c sour cream

Directions
  • Step #1 Boil potatoes with skins on, in salted water until just tender.
  • Step #2 Drain & cool to lukewarm.
  • Step #3 Peel; cut into 1/2 inch cubes.
  • Step #4 Pour Italian dressing over potatoes & sprinkle with the 1/2 tsp of salt.
  • Step #5 Toss to coat.
  • Step #6 Refrigerate, covered, several hrs or overnight.
  • Step #7 Chop 9 eggs & add with the pickles, radishes, celery, & onions to the potatoes.
  • Step #8 Mix mayonnaise, salt, mustard, sour cream, celery seed & pepper together.
  • Step #9 Fold into potato mixture.
  • Step #10 Refrigerate, covered, until serving time.
  • Step #11 Garnish with the remaining 3 eggs cut into slices or wedges.
