Zucchini Alla Romana Recipe

Ingredients

2 tsps olive oil .
4 small zucchini, sliced (4 c) .
2 tbsps romano cheese or parmesan cheese, finely shredded .
1 tsp dried mint or dried basil, crushed or 1 tbsp fresh mint, snipped or fresh basil .
1/4 tsp salt .
1 dash black pepper .
2 garlic cloves

Directions

Step #1 In a large skillet heat the oil.
Step #2 Cook whole garlic cloves in hot oil until lightly brown, then discard the garlic.
Step #3 Add zucchini, dried mint (if using), salt & pepper to oil in skillet.
Step #4 Stirring every once in awhile, cook, uncovered, over med-heat/flame for about 5 mins or until the zucchini is crisp-tender.
Step #5 To serve, sprinkle with cheese & fresh mint (if using).
