Tabbouleh A La Paula Wolfert Recipe

Ingredients
  • 1/4 tsp cinnamon .
  • 1 medium cucumber, peeled, halved, seeded, & finely sliced .
  • 1/2 c fresh sorrel leaves, shredded (optional) .
  • 2 medium tomatoes, peeled, seeded & sliced .
  • 3/4 tsp fresh ground black pepper .
  • 1/4 tsp cayenne pepper .
  • salt .
  • 1/4 tsp allspice .
  • 8 scallions, finely sliced .
  • 1/2 c fresh mint leaves, shredded .
  • 1/4 tsp nutmeg .
  • 2 c flat leaf parsley, sliced .
  • 2/3 c fine grain bulgur wheat .
  • 3 tbsps fresh lemon juice .
  • 3 tbsps extra-virgin olive oil

Directions
  • Step #1 Pick over the bulgar & place this in a fine seive; shake to remove any dust & place this in cold water to soak briefly.
  • Step #2 In a good sized mixing bowl, cucumber, herbs, mix the scallions, spices, oil & lemon juice.
  • Step #3 Drain the bulgar & squeeze by hand to remove any moisture.
  • Step #4 Immediately add to the bowl & mix well.
  • Step #5 Add salt to taste, cover, & put in the fridge overnight.
  • Step #6 Before serving, mix in tomatoes & extra salt if needed.
