Red Lettuce With Balsamic Onions Recipe

Ingredients
  • 2 tbsps good balsamic vinegar .
  • 1/4 c good balsamic vinegar, plus .
  • 3 small red onions .
  • 6 tbsps minced shallots (2 large) .
  • 1/4 c good red wine vinegar .
  • 1 1/2 tsps kosher salt .
  • 2 heads red-leaf lettuce, washed, spun dry & torn into pieces .
  • 1 tsp fresh ground black pepper .
  • 1 c olive oil .
  • 2 tsps Dijon mustard

Directions
  • Step #1 Prehead oven to 375°F.
  • Step #2 Cut the onions in 1/2, then slice 1/4-inch thick.
  • Step #3 Place on baking sheet & toss with 1/4 c balsamic vinegar, 1/4 c olive oil, 1 tsp salt, & 1/2 tsp pepper.
  • Step #4 Bake for 12-15 mins, until the onions are tender.
  • Step #5 Remove from oven & toss with remaining 2 tbsps balsamic vinegar & cool to about room temp.
  • Step #6 Whisk together the shallots, mustard, red wine vinegar, 1/2 tsp salt & 1/2 tsp pepper in a small bowl.
  • Step #7 Slowly add 3/4 c olive oil, whisking while pouring, until emulsified.
  • Step #8 To assemble, toss lettuce with dressing to taste.
  • Step #9 Place the lettuce on 6 plates & arrange onions on top.
  • Step #10 Sprinkle top with salt & pepper.
