Maple Pecan Marinated Pork Tenderloin Recipe

Ingredients
  • 1 tbsp chili powder .
  • 3-4 tbsps olive oil .
  • 1 1/4 c sliced pecans .
  • 1/2 tsp dried red pepper flakes (or to taste) .
  • 1-2 tbsp minced fresh garlic (optional but good to add) .
  • 2 1/2 lbs pork tenderloins (a package of two tenderloins) .
  • 3/4 c maple syrup .
  • 1 tsp salt (or to taste, I use about 1 tsp.) .
  • 1/2 c honey .
  • 2 tsps dried thyme (or to taste) .
  • 1 tbsp Dijon mustard .
  • 1 large onion, sliced

Directions
  • Step #1 Cut slits in the pork tenderloins to absorb more maarinade, & place this in a shallow glass pan.
  • Step #2 Top with onions & garlic (if using) with hands, distribute the onions & garlic over the pork.
  • Step #3 In a separate bowl mix olive oil, chili powder, pecans, maple syrup, mustard, honey, thyme, salt & red pepper flakes; mix to mix.
  • Step #4 Pour over pork & put in the fridge for a minumum of 8 hrs or overnight.
  • Step #5 When ready to cook, place the pork on the grill or broil in the oven (reserve the marinade).
  • Step #6 If grilling, cook the tenderloins on a medium-low heat (covered grill) for about 10 mins on EACH side, or until done.
  • Step #7 Let the tenderloin rest for 15 mins before slicing.
  • Step #8 *NOTE* when the pork is on the grill heat the marinade, & let simmer for about 10-15 mins, & serve over the tenderloins.
