Stacked Chicken Enchiladas Recipe

Ingredients
  • salt & pepper .
  • sour cream (to garnish) .
  • 4 c of shredded cheese (cheddar or co-jack are very good) .
  • 2 (4 oz) cans sliced green chilies (drained) .
  • 9 wrap size flour tortillas .
  • 2 tbsps olive oil .
  • 1 tsp of minced garlic .
  • 1 large onion, sliced .
  • 4 boneless skinless chicken breasts .
  • 1 (17 oz) can red enchilada sauce .
  • pico de gallo (to garnish) .
  • 1 (16 oz) can refried beans

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Cut the chicken breasts into cubes & brown in a skillet with olive oil, onion, & garlic til done.
  • Step #3 Add green chiles & salt & pepper to taste.
  • Step #4 Heat beans in the microwave or on the stove til they are softened.
  • Step #5 Lay 3 of the flour tortillas in the bottom of 9x13 pan so to cover.
  • Step #6 Pour 1/3 of the enchilada sauce over the tortillas.
  • Step #7 Spread 1/2 of the refried beans on the tortillas.
  • Step #8 Layer 1/2 of chicken/onion/chile mixture over beans.
  • Step #9 Sprinkle top 2 c of shredded cheese over the chicken mixture.
  • Step #10 Cover up with 3 more flour tortillas & repeat all layers.
  • Step #11 Cover up with the last 3 flour tortillas & trim them to fit the pan.
  • Step #12 Pour the last bit of enchilada sauce over the top layer of tortillas & spread it around.
  • Step #13 You can sprinkle more cheese on top if you like.
  • Step #14 Bake at 350 for 30-40 mins.
  • Step #15 When it's done, let it sit on the stove for about 10-15 mins to firm up, cut it & serve this with sour cream & pico de gallo if desired.
