Banana Curry. (vegetarian.) Recipe

Ingredients
  • 1/4 tsp of finely sliced red chili .
  • 1 c water .
  • 2 c boiled rice, for serving .
  • 2 tbsps butter .
  • 4 bananas .
  • 1 tbsp apricot jam .
  • 1 1/2 tbsps curry powder (or to taste) .
  • 2 peeled & coarsely grated cooking apples .
  • 2 1/2 tbsps wine vinegar .
  • 2 hard-boiled eggs, for serving .
  • 1/4 tsp salt .
  • 1 1/2 tbsps sultanas .
  • 2 sliced red onions

Directions
  • Step #1 Brown the onion in the butter, then add the curry powder & fry for for a few more mins.
  • Step #2 Add the remaining ingredients, except for the bananas, cover the pan & let simmer for 10 mins.
  • Step #3 Halve the bananas, & pack them down into the sauce, & continue to simmer with the lid on till be bananas become soft, (about 5 mins).
  • Step #4 Serve on a bed of rice, garnished with the hard boild eggs.
