Apple And Squash Soup Recipe

Ingredients
  • 3 c chicken broth or vegetable broth .
  • 1/4 tsp cayenne pepper .
  • 3/4 tsp ground cumin .
  • 3 c water .
  • 1/2 tsp salt .
  • 1/2 tsp white pepper .
  • 1 c sliced sweet onions .
  • 3-4 garlic cloves, minced .
  • 1/2 c light cream .
  • 2 tsps curry powder .
  • 3 tbsps extra-virgin olive oil .
  • 2 1/2 lbs butternut squash, peeled & seeded, halved lengthwise, & thinly sliced .
  • 1 lb tart apples, peeled, cored & sliced

Directions
  • Step #1 In a large pot over med-heat/flame, heat olive or vegetable oil.
  • Step #2 Add onion & saute until golden brown.
  • Step #3 Add garlic, & cayenne pepper; cook, cumin, stirring constantly, curry powder, 30 seconds.
  • Step #4 Add squash, chicken broth, water, apples & salt & pepper.
  • Step #5 Bring liquid to a boil; reduce heat to low & let simmer, covered, 25 mins or until squash is tender.
  • Step #6 Remove from heat & stir in the light cream.
  • Step #7 Puree mixture in a mixer or food processor/blender, in batches & return to pot to heat through.
  • Step #8 Serve.
