Vegetarian Banana Cinnamon Pancakes Recipe

Ingredients
  • 2 tsps baking powder .
  • 2 c water .
  • 1 ripe banana, mashed .
  • vanilla extract (optional) .
  • 1 tsp cinnamon .
  • 1/2 c uncooked oatmeal .
  • 1 tsp nutmeg .
  • 1 1/2 c whole wheat flour

Directions
  • Step #1 Mix together the mashed banana & water.
  • Step #2 Add dry ingredients & mix, leaving lumps in the batter - you must leave lumps in the batter.
  • Step #3 Pour 1/2 c of batter into a hot, lightly oiled frying pan.
  • Step #4 When bubbles rise through the middle of the pancake & break on the top, flip the pancake & cook this until browned underneath.
  • Step #5 (Note: Test the pan before cooking the pancakes by throwing a few drops of water onto it.
  • Step #6 If the water jumps around & then disappears, the pan is at the correct temperature.
