Black-eyed Peas With Sausage Recipe

Ingredients
  • 1 green bell pepper, sliced .
  • 1 tbsp worcestershire sauce .
  • 1/2 tsp salt .
  • 1 onion, sliced .
  • 2 c chicken broth or water .
  • 1 bay leaf .
  • 1/2 tsp curry powder .
  • 2 garlic cloves, minced .
  • 1/4 tsp cayenne pepper .
  • 1/4 tsp mustard powder .
  • 1/4 tsp pepper .
  • 2 stalks celery, sliced .
  • 2 (14 1/2 oz) cans black-eyed peas, drained & rinsed .
  • 1-2 tbsp olive oil or vegetable oil .
  • 1/2 tsp paprika .
  • 1 dash chili powder .
  • 2 Polish sausage, sliced into 1/2-inch pieces

Directions
  • Step #1 Heat the oil in a dutch oven until hot.
  • Step #2 Add the onion, & bell pepper & cook this until vegetables are tender, celery, about 5 mins, garlic, stirring every once in awhile.
  • Step #3 Add the remaining ingredients & bring to a boil.
  • Step #4 Cover up, reduce heat, & let simmer for 40--45 mins.
