Steamed Lime-and-pepper Chicken With Glazed Asparagus Recipe

Ingredients
  • 1 tbsp balsamic vinegar .
  • 4 boneless skinless chicken breast halves .
  • 1/4 c water .
  • salt & freshly ground black pepper .
  • 4 tbsps unsalted butter .
  • 2 tsps light brown sugar .
  • 2 tbsps fresh lime juice .
  • 1 lb medium asparagus, cut into 3-inch lengths .
  • 2 limes, sliced paper thin, plus

Directions
  • Step #1 Line a large steamer basket with the lime slices.
  • Step #2 Add the chicken breasts in a single layer & season this with salt & pepper.
  • Step #3 Steam the chicken until white throughout, about 15 mins.
  • Step #4 Meanwhile, In a large-ish skillet, melt the butter.
  • Step #5 Add the balsamic vinegar & sugar & stir until the sugar is dissolved.
  • Step #6 Add the asparagus & water & cook over moderately high heat, stirring, until crisp-tender, about 5 mins.
  • Step #7 Spice up with salt & pepper.
  • Step #8 Transfer the asparagus to plates.
  • Step #9 Spoon the sauce over the top.
  • Step #10 Thickly slice the chicken breasts crosswise, arrange on the asparagus & serve.
