Artichoke Cheese Oven Omelet Recipe

Ingredients
  • 1 c shredded monterey jack cheese .
  • 6 eggs, beaten .
  • 1/4 c grated parmesan cheese .
  • 1 c shredded cheddar cheese .
  • 3/4 c salsa .
  • 1 (14 oz) can water-packed artichoke hearts, drained & sliced .
  • 1 c sour cream .
  • sliced fresh tomatoes, sliced ripe olives & minced chives (optional)

Directions
  • Step #1 Spread salsa in a greased 9-inch deep dish pie-plate.
  • Step #2 Top with the artichoke hearts & cheeses.
  • Step #3 In a bowl, whisk the eggs & sour cream.
  • Step #4 Pour over the cheeses.
  • Step #5 Bake, uncovered, at 350 F for 25-30 mins or until a knife inserted near the center comes out clean.
  • Step #6 Let stand for 5 mins before cutting.
  • Step #7 Garnish with tomatoes, olives & chives if desired.
  • Step #8 Yield: 6-8 servings.
