Funghi Ripieni (stuffed Mushrooms) Recipe

Ingredients
  • 12 large mushrooms .
  • 250 g arborio rice, cooked according to the packet directions .
  • 1 c pasta sauce .
  • 1 tbsp parmesan cheese, grated .
  • 1 tbsp fresh basil leaves, sliced .
  • 4 garlic cloves, crushed .
  • 1/2 c mozzarella cheese, grated .
  • 1 tbsp fresh parsley, sliced .
  • 1/2 c pasta sauce .
  • 1 c mozzarella cheese, grated .
  • 1 tbsp fresh oregano, sliced

Directions
  • Step #1 Cook rice in boiling water until cooked al dente & drain.
  • Step #2 While the rice is still hot, garlic, stir in the the mozarello cheese, herbs parmesan cheese & 1/2 c pasta sauce.
  • Step #3 Clean the mushrooms, remove the stems, & fill each mushroomwith the rice mixture & place on a lightly greased baking tray.
  • Step #4 Spoon the remaining pasta sauce over each mushroom & sprinkle with mozarello cheese.
  • Step #5 Bake in a pre-heated oven at 200°C for 15 mins or until golden brown.
