1 lb halibut fillets (or other white fish, sufficient for four servings) .
1/2 tsp fresh ginger, roughly sliced .
2 tbsps fried shallots (optional) .
For the Fish .
1 tbsp fresh cilantro .
1 tsp kosher salt .
3 roma tomatoes, sliced thinly .
1 tsp oyster sauce .
1 cucumber, thinly sliced
Directions
Step #1 For the Dressing.
Step #2 Combine the ingredients in a mixer & puree until smooth.
Step #3 Taste & adjust seasoning.
Step #4 For the Fish.
Step #5 Steam the filets for 9 to 11 mins.
Step #6 Fan out tomato & cucumber slices on serving platter or on four individual plates.
Step #7 Place steamed fish on top of tomato & cucumber.
Step #8 Drizzle dressing over fish.
Step #9 Rough chop herbs & scatter over the dressed fish.
Step #10 Garnish, if you like, with fried shallots & pickled red chilis.
Step #11 Note: To fry shallots, thinly slice them & stir fry in hot oil in a wok till they are golden brown--drain on a paper-towel covered rack & serve as a crispy garnish.
