Step #1 Bring the wine to a boil in a medium saucepan; Add the mussels, until they open, shaking the pan a few times, cover & cook over high heat, 3 mins; transfer to a large bowl; Shell the mussels & reserve.
Step #2 Rinse out the pan.
Step #3 Pour the mussel liquid into the pan, stopping before you reach the grit at the bottom.
Step #4 In a small bowl, parsley & lemon juice; Spice up with cayenne, mix the mayonnaise with the garlic, salt & pepper;.
Step #5 Heat the oil In a large-ish skillet; Spice up the cod with salt & black pepper & cook over moderate heat until lightly browned, about 4 mins per side.
Step #6 Bring the mussel liquid to a boil & remove this from the heat; Whisk in the mayonnaise, then stir in the the mussels; Transfer the cod to shallow bowls & spoon the mussels & sauce around it; Garnish with the red pepper strips & serve.
