Scalloped Squash Recipe

Ingredients
  • 2 tbsps butter .
  • 1 egg .
  • 1/2 c sliced onions .
  • 1 c grated cheddar cheese .
  • 3/4 c up herb flavored cornbread stuffing mix .
  • 4 c summer squash .
  • 12-15 butter flavored crackers .
  • 1 (10 3/4 oz) can cream of mushroom soup .
  • 1/3 c milk

Directions
  • Step #1 Cook sliced squash until tender, drain.
  • Step #2 Meanwhile, slowly stir milk into soup, onion, mix in egg & drained squash, & stuffing.
  • Step #3 Toss lightly to mix.
  • Step #4 Pour into a 2-quart casserole dish that has been buttered.
  • Step #5 Cheese topping: Crush the butter crackers, toss lightly with the 2 tbsps butter.
  • Step #6 Sprinkle top this over the squash.
  • Step #7 Top with the grated cheese.
  • Step #8 Bake at 350°F for 20 mins.
