Step #1 Place the oil in a non-stick pan & carefully cook the garlic, until it is softened but not browned.
Step #2 Add the lemon juice, mix well & cook for 30 seconds to a min.
Step #3 Place the trout in a food processor/blender together with the garlic mixture.
Step #4 Roughly mix & then add to the food processor/blender the cream cheese, paprika, salt & dill, & process until the mixture is just mixd & season to taste.
Step #5 Spoon the paté into a small bowl & serve this with celery stalks.
