Thai Curry Stir Fry Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 1/4 c lightly dry roasted salted peanuts .
  • 1 c diagonally sliced carrots .
  • 1/4 tsp crushed red pepper flakes .
  • 1 tbsp reduced sodium soy sauce .
  • 1 lb boneless pork chops .
  • 1 tsp canola oil .
  • 3 c broccoli florets .
  • 1 c reduced-sodium chicken broth .
  • 1/2 medium onion, cut into slivers .
  • 3 c hot cooked rice .
  • 2 tsps cornstarch .
  • 2 tsps curry powder

Directions
  • Step #1 Stir together broth, soy sauce, cornstarch, curry powder, & red pepper.
  • Step #2 Set aside.
  • Step #3 Trim fat from pork chops.
  • Step #4 Thinly slice across the grain into bite-size strips.
  • Step #5 Set aside.
  • Step #6 Lightly coat a nonstick wok or large skillet with cooking spray.
  • Step #7 Heat over medium-high heat; stir-fry onion & garlic for 1 min.
  • Step #8 Remove from wok.
  • Step #9 Add broccoli & carrot to wok.
  • Step #10 Stir-fry for 2 to 3 mins or until crisp-tender.
  • Step #11 Remove from wok.
  • Step #12 Add oil to wok.
  • Step #13 Stir-fry pork, half at a time, for 1 to 3 mins or until no longer pink.
  • Step #14 Return all pork to wok.
  • Step #15 Stir broth mixture & add to wok; cook & stir until broth is boiling & slightly thickened.
  • Step #16 Return all vegetables to wok & heat through.
  • Step #17 Serve pork mixture over hot cooked rice.
  • Step #18 Sprinkle top with peanuts.
